No Frosting Cupcakes

8 oz. cream cheese
1/2 cup sugar
1/8 tsp. salt
1 egg

Beat until creamy and add 1 cup chocolate chips.

3 cups flour
2 tsp soda
2 cups cold water
2 tsp vinegar
2 cups sugar
1/2 cup cocoa
2 tsp vanilla
1 cup salad oil

Mix dry ingredients and add remaining ingredients. Beat well. Batter will be thin.

Fill cups 1/3 full and add 1 tsp. of cream mixture. Top is sprinkled with nut mixture (1 cup nuts, 1/4 cup sugar). Bake at 300° for 30-35 minutes. Yields 3 dozen.


  1. Gail skips the nut mixture
  2. For mini cupcakes, bake for 15 minutes
  3. Freeze well, but a warning: these are great right out of the freezer!
